Named in honor of his beloved grandmother, Lillian Carmella, the restaurant is rooted in the memories of their time spent together in the kitchen, where flour-dusted countertops and simmering pots were the backdrop to laughter, love, and the kind of meals that brought the whole family together.
From her, he inherited more than recipes—he inherited the belief that fresh, hand-picked ingredients and heartfelt intention are the true essence of great food. That philosophy lives on in every plate served at Carmella’s Cucina Italiana.

MICHAEL GRABER
Michael’s foundation in classical technique was elevated by hands-on experience in Italy, where he learned the true soul of Italian cooking from master chefs. There, he embraced the art of handmade pasta and slow-crafted sauces—skills that now define his culinary identity and infuse every dish with authenticity and care.
A graduate of the prestigious Culinary Institute of America in New York, Chef Michael brings a decade of culinary expertise to every plate. His impressive career includes roles at Laurel Creek Country Club in Mt. Laurel, New Jersey, The Saloon in Bonita Springs, Florida, and the renowned Pazzo on 5th Avenue in Naples, Florida. His talent and passion for cooking have earned him recognition—including being featured in Gulf Coast Living magazine in Southwest Florida. He has also had the honor of cooking for celebrity chef Guy Fieri, a testament to the creativity and dedication he brings to his craft.
